Today’s ‘The Butler’ inspired recipe of Earl Grey Panna Cotta is brought to us by ivana.reich
When the temperature rises and you do not fancy a hot tea, why not try and make a refreshing panna cotta with the flavour of black tea, honey and blueberry coulis. This is a perfect non-baked dessert, ideal for the hot summer days.

The Butler – Earl Grey is a traditional blend of Ceylon tea, natural bergamot oil, lime leaves and sunflower seeds.
- 250 ml whipping cream
- 2 tablespoons honey (or sugar, depending on your taste)
- 3 tea bags of black tea
- 2 leaves of gelatine
- 50 g blueberries
- 1 leaf of gelatine
- Mix the whipping cream with honey (sugar) in a pot and heat up, but be careful not to boil the cream.
- Add the tea bags into the mixture and leave to infuse for at least 10 minutes.
- In the meantime, prepare the gelatine. Let the leaves soak in the desired amount of water (depending on the kind of gelatine you use).
- As soon as the mixture is flavoured enough, take out the tea bags and heat up slightly.
- Pour the mixture into glasses and let cool in the fridge for at least 4 hours.
- For the blueberry coulis, blend the blueberries with a little bit of water (milk) and prepare the gelatine. Mix with the blueberries and apply on the cooled panna cotta. After, let cool again.
- Serve with fruits or on its own.
Tip: It is also possible to make three layers – tea, honey and in the end coulis. When doing this, keep in mind that it is necessary to let all layers cool first and then apply them. However, coulis can be left out altogether as the recipe works very well without it.
