Raw Earl Grey & Chocolate Slices

Raw cake is my go-to guilt free healthy treat. So easy to make and all the possible variations with seasonal fruits and other ingredients make them a joy to create.

So when I met “The Butler Tea”, I immediately thought that this aromatic tea would add amazing flavour to my cake. The tea had a surprisingly fruity mouthfeel with that classic warming aftertaste that went well with the chocolate and nuts. This flavour has already become our family’s favourite!!

This cake is gluten free, dairy free and refined sugar free.

INGREDIENTS: 

Raw Earl Grey & Chocolate Slices Recipe for 6 silicone molds (87×48×h-24mm x6)

Base:
  • 60g raw walnuts
  • 2 Tbsp. melted raw cacao butter
  • 2 Tbsp. shredded coconut
  • 1 Tbsp. “The butler” tea leaves
  • 1 Tbsp. raw cacao nib
  • 1 Tbsp. raw cacao powder
  • 4 pitted Medjool dates (about 70g)
  • Pinch of pink salt or good quality salt
Earl grey layer:
  • 90g raw cashews soaked 5 hours and rinsed
  • 1/2 cup (120ml) coconut cream
  • 3 Tbsp. (30g) melted raw cacao butter
  • 2-3 Tbsp. raw agave or maple syrup
  • 1 Tbsp. “The butler” tea leaves
  • ¼ tsp vanilla paste
  • Pinch of pink salt or good quality salt
Chocolate layer:
  • 50g coconut oil or raw cacao butter
  • 15g raw cacao powder
  • 1.5 Tbsp. raw agave or maple syrup
  • Pinch of pink salt or good quality salt

INSTRUCTIONS: 

  1. In a food processor place every ingredient for the base, and process until well processed but still slightly crumbly. Tightly press the mixture into the bottom of the molds with your hands.
  2. In a high-speed blender place every ingredient for the earl grey layer and blend well until smooth. Layer the filling above the base. Cool it in the freezer until set.
  3. Place every ingredient for the chocolate layerin a mixing bowl and melt in a double boiler. (Keep the mixture under 46C) Stir chocolate with a whisk (not a spatula!!) until mixture becomes smooth. Layer the mixture above the earl grey layer. Cool it in the freezer until set.
  4. Remove from the molds and enjoy!
