Today’s recipe of Raspberry Crumble Parfait with almond and maple granola is brought to us by nomadicfitfoodie

Hi, I’m Monika. I’m the woman behind nomadicfitfoodie. As if you couldn’t tell with my account, I’m a huge breakfast fan. 🙂 Hugely addicted to smoothie bowls and porridge. But, the good old breakfast parfait rounds make up my top 3 favourite breakfast treats.

This is the perfect breakfast for on the go. You can eat it in your car, on public transport, or in your office. It is also the perfect snack, without all the nasty stuff. Breakfast is the most important meal of the day. So you should always start on the right foot, I guarantee your body will thank you for it.

INGREDIENTS: 

Raspberry sauce

Almond and maple granola 

  • 2 cups oats
  • 1 cup almonds
  • 1/2 cup maple syrup
  • 1/4 cup coconut oil
  • 1 tsp vanilla extract
  • a pinch of salt

Raspberry Parfait recipe 

INSTRUCTIONS: 

Raspberry sauce

  1. In a saucepan, add in raspberries, honey and vanilla extract and cook over a low heat.
  2. Mix the cornflour with a little of coconut water til it forms a smooth paste.
  3. Add the paste in to the raspberries and bring the pan up to boil. Make sure you stir constantly so no lumps form.
  4. Once it thickens up, set aside to cool completely.

Almond and maple granola

  1. Pre heat the oven to 160°C and line a baking tray with baking paper.
  2. Roughly chop up the almonds, and transfer to a large bowl. Add in the oats, vanilla and salt. Lightly toss the mixture.
  3. In a small pan, heat the maple and coconut oil on low to medium heat til it’s smooth and runny. Pour the warm liquid in the oat bowl and quickly mix til it’s all combined.
  4. Pour the granola on the lined tray and flatten the mixture so it cooks evenly. Pop it in the oven. Make sure you toss the granola around during the cooking process so it’s evenly golden brown.
  5. Once it’s golden brown, remove from the oven and leave it to cool down.

Raspberry Parfait 

  1. Build your layers in your jars or cups with coconut yogurt, then granola and lastly the raspberry sauce.
  2. Continue with a second layer and top with raspberries.

It’s seems like a long process, but the best thing about parfaits is most of the hard work is made ahead of time. What I like to do is, pop some granola and the sauce in a jar overnight in the fridge and pour some yogurt on top in the morning ready for the  day ahead.
