Today’s Cool Caribbean inspired recipe of Summer fruity Jelly is brought to us by leepoynt.

Summer is officially long gone. Outside blows a breath of fresh air, with leaves glowing in many different colours. How about if you could pick up a little taste of summer? In the fridge, for example. In the fridge? Summer is hot after all? Yes of course! What really tastes like summer holidays?
Tea and the gang’s ‘Cool Caribbean’ Oolong tea, packed with mango and pineapple flavours. Here is a recipe I have created using the tea, which is a great way of enjoying all the flavour, as a cold snack and the best part is that the recipe is vegan friendly, just like the tea!

INGREDIENTS:

  • 0.5L Mango Juice
  • 0.5L Pineapple Juice
  • 2 x tea bags of ‘Cool Caribbean‘ Mango and Pineapple Oolong Tea
  • 1 packet of Agar-Agar (you can also use Gelantine Powder)
  • Some Water

INSTRUCTIONS:

1. Read the instructions on the Agar-Agar packaging. Sometimes you can use cold liquids (follow instruction B)
but if not the liquid has to be hot like in this case (follow instruction A).

2A. Mix the juices and pour them into a cooking pot. Heat them up till the liquid is nearly boiling (about 80 degrees C).

3A. Add the Agar-Agar Powder as it stands on the packaging. Mix it.

4A. Put in the tea bags and cook the tea in the juice while stirring constantly for 3-5 Minutes.

2B. Make a big cup of tea and let it cool down.

3B. Mix the juice and the cold tea.

4B. Add the Agar-Agar or Gelantine Powder as it stand on the packaging.

5. Fill the liquid in a form of your choice.

6. Let it chill in the fridge for 1-2 hours

7. Enjoy!
